Change is hard for a lot of people. For me though, I have always embraced change…even sought it out when I felt like I needed to shake up my life. However, a trip to the doctor a few months ago brought about a change that I never thought I could make. I was diagnosed with Celiac disease.

Celiac disease is an autoimmune disease of the small intestines. People with this disease can’t eat gluten. What a surprise it was to discover all the foods that contain gluten! It’s hidden in foods and condiments that I hadn’t even considered. I spent many weeks scouring the internet, educating myself on how to eat gluten-free. Now I bake all of my bread, muffins, biscuits, cakes, hamburger buns, pizza crust and the list goes on…all without the dreaded gluten.

Yes, it’s hard. In a strange way though, it’s rewarding. When I see this loaf of crusty, warm bread, I am pleased. Pleased that I have succeeded in making the required change and pleased that I have revisited the art of baking that I had once enjoyed.
